I LOVE snacking! And I have no shame about it. It's great to fuel our bodies with nutrients throughout the day. There are a few things I like to keep in mind when choosing a snack. The primary factor being fiber content.
If a food has fiber it will keep you fuller for longer. Not to mention all the other health benefits of fiber. Fiber is perfect for snacks, because that's their purpose - to keep you full!
This Crispy Chickpea Trail Mix packs in TONS of fiber. Nuts, seeds, and raisins that you'd find in any old trail mix are great. But the chickpeas are what really put this trail mix over the edge. Beans are loaded with fiber. And they've also got quite a bit of protein. They are perfect to balance out the nutritional profile of a classic trail mix.
Crispy Chickpeas also taste delicious! I have a basic recipe for them here and also they are incredible in these Chickpea Stuffed Sweet Potatoes.
You just pop the chickpeas in your oven or air fryer and let them crisp up on the outside. The result is a nice crunchy chickpea with a slightly soft interior. Perfect!
Step 1. Heat the oven or air fryer or oven to 350. Bake or fry chickpeas with some salt for 10 minutes.
Step 2. When the chickpeas are done toast the almonds, peanuts, and pecans for a few minutes, until they are just starting to turn golden and fragrant.
Step 3. Let the chickpeas and nuts cool completely.
Step 4. Mix the cooled chickpeas, nuts, chocolate chips, pumpkin seeds, and raisins. Enjoy!
