You can definitely make an ultra-sweet version of vegan cream cheese frosting. But what if you're looking for something without a ton of sugar? What if you want a frosting that is sweet, but not TOO sweet?
Enter: this refined sugar free vegan cream cheese frosting.
Four simple ingredients create a tasty frosting you can use on all your baked goods!
Step 1. Using a hand mixer or stand mixer, beat the frosting ingredients until combined and slightly fluffy. Refrigerate until ready to use.
This recipe yields just over 2 cups of frosting. It is enough to frost 12 cupcakes or one 9" cake.
I also use this amount of frosting to ice the tops (but not sides) of my 8" layer cakes.
As with regular cream cheese frosting, this icing should be stored in the fridge. Keep it in an air-tight container or zip-top bag.
If you make cake or cupcakes and plan to frost and serve on a later date, I recommend frosting just before you need to serve. Otherwise, store any frosted cakes or cupcakes in the refrigerator.
This frosting will last in the fridge for a week.
