It’s been 6 months since I started The Plant Based Catholic and I couldn’t be more pleased with its success!
I am so grateful for you and your support of this blog. You all are fantastic. Thank you to everyone who has supported me in this journey. It has been such a wonderful experience for me to share my recipes and lifestyle with you. I’m so excited to see what 2019 brings.

Thank goodness you guys liked this one! It is one of my favorites. I made it over the holidays as an appetizer. Sweet potatoes meet sunflower seed butter and chickpeas — delicious!
Well I guess you guys like sweet potatoes. No complaints here, I like them too. An easy recipe to get your cruciferous veggies in.
Classic. Nice Cream is seriously the best. I eat frozen banana every day and am not ashamed. What could be better than healthy dessert every night? And the flavors!! Peanut butter + banana is my favorite!
Another classic! This is my breakfast on the days when I get to eat at home (as opposed to when I’m on the go and bring overnight oats). There’s nothing healthier than a nice bowl of oats in the morning with berries and flaxseed to go with.
Of course, another oats recipe! Again, one of my go-to recipes for a healthy and delicious breakfast. Perfect for when you don’t have time to cook in the morning — you can easily make breakfast for the week on Sunday.
Roasted pecans are sooooo yummy. I definitely ate a few too many of these over the holidays. But hey, I know they’re good for me! Plus, they make a perfect party snack or gift!
One word: YUM. I remember the first time I made my own cashew butter. I thought I was eating icing with a spoon. Brb, going to make some more…
YES! Ohio for the win! If you’re not from Ohio and haven’t tried buckeyes, please stop what you’re doing and go make these. They are simply delicious. And with my vegan version they are completely healthy — made with only a few ingredients and sweetened with date. A perfect bite-sized snack!
I’m glad we’re all on the same page here. Roasted parsnips are SO good. Slightly sweet and crispy, roasted parsnips are actually the best. I make them all the time! So delicious. So healthy.
