Air-Fryer Cauliflower Rice Bowls

Ingredients
- 2 Pounds Frozen Cauliflower Rice, thawed enough so it can be spread in one layer (see post for fresh rice instructions)
- 1 Teaspoon Cumin
- 1 Teaspoon Paprika
- 1/2 Teaspoon Cayenne
- 1 Recipe Smoky Tofu or Air Fried Tempeh or your preferred protein
- 1 Cup Frozen Edamame, defrosted
- 3/4 Cup Thinly Sliced Red Cabbage
- 1/2 Cucumber, sliced
- 1/4 Red Onion, sliced
- To Serve: sesame seeds, scallions
Dressing
- 1/2 Cup Non-Dairy Yogurt
- 1 Tablespoon Tahini
- 1/2 Teaspoon Cayenne (*this dressing is SPICY - reduce the amount of cayenne for a more mild dressing)
- 1/4 Teaspoon Salt
Instructions
- Make your preferred protein. I recommend Smoky Tofu or Air Fried Tempeh.
- Preheat the air fryer to 350°F. Line the air fryer base/rack with aluminum foil.
- Toss the cauliflower rice with paprika, cumin, and cayenne.
- Place in foil-lined air fryer and cook 15-20 minutes until warmed through and a crispy layer forms on top.
- Meanwhile, make the dressing. Mix the yogurt, tahini, cayenne, and salt.
- When the cauliflower rice is cooked, assemble the bowls. Place a bed of rice in the bottom of the bowl. Top with protein, edamame, cabbage, and red onion. Drizzle with the tahini yogurt dressing and top with sesame seeds and scallions. Enjoy!
