Ingredients

  • 3/4 Cup Dry Quinoa
  • 6 oz Arugula
  • 4 Medium Oranges
  • ½ Cup Vegan Feta (optional)
  • ½ Cup Pepitas
  • Fresh Mint Leaves, for garnish

Dressing

  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Maple Syrup
  • 1 Tablespoon Miso
  • 1 Tablespoon Tahini
  • ½ Teaspoon Salt
  • ¼ Teaspoon Pepper

Instructions

  1. Cook the quinoa with 1 1/2 cups of water. Bring to a boil then reduce to a simmer and let cook for 15 minutes.
  2. In a small bowl, whisk together the dressing ingredients.
  3. Slice the oranges as desired. For a flowery look, slice the oranges into rounds, then trim off the skin. Alternatively, peel the oranges and slice lengthwise into wedges.
  4. When the quinoa is cooked, assemble the salad. Arrange a bed of arugula on a platter then top with the quinoa, feta, and pepitas. Garnish with a few leaves of mint.
