Ingredients

  • 8 Ounces Spaghetti or Linguine
  • 1 Medium Yellow Onion, thinly sliced
  • 2 Heads Broccolini, whole or Broccoli, chopped into florets
  • 1 Bunch Asparagus
  • 3 Cloves Garlic, minced
  • 1/4 Cup Lemon Juice
  • 2 Tablespoons Tahini
  • 1/2 Teaspoon Salt
  • 1/8 Teaspoon Pepper
  • Red Pepper Flakes

Instructions

  1. Cook pasta according to the package directions. Reserve 1/4 cup of the pasta water. Drain and rinse well.
  2. In a large skillet, sauté the onion, broccolini, and asparagus for 5-7 minutes, until starting to soften. Cover with a lid to help the veggies cook.
  3. Turn off the heat and add the cooked pasta, garlic, lemon juice, tahini, salt, and pepper. Stir to coat the vegetables. Add a splash of pasta water to create a sauce.
  4. Serve and season with red pepper flakes. Enjoy!
