Crispy Chickpea Trail Mix
Add deliciously crispy, high-fiber chickpeas to a classic trail mix to create Crispy Chickpea Trail Mix! It's a high-fiber plant-based snack you can take with you on the go.

- 2 Cups Chickpeas
- 1/2 Cup Almonds
- 1/2 Cup Peanuts
- 1/2 Cup Pecans
- 1/2 Cup Chocolate Chips
- 1/2 Cup Pumpkin Seeds
- 1/2 Cup Raisins
- 1/2 Cup Golden Raisins
- Heat the oven or air fryer or oven to 350. Bake or fry chickpeas with some salt for 10 minutes.
- When the chickpeas are done toast the almonds, peanuts, and pecans for a few minutes, until they are just starting to turn golden and fragrant.
- Let the chickpeas and nuts cool completely.
- Mix the cooled chickpeas, nuts, chocolate chips, pumpkin seeds, and raisins. Enjoy!
