Ingredients
- 2 Pounds Sweet Potatoes
- 2 Tablespoons Vegetable Stock
- 2 Tablespoons Date Syrup
- 1 Teaspoon Ground Cumin
- 1 Teaspoon Cayenne
- 1 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 1 Cup Choppped Fresh Cilantro
Instructions
- Preheat the oven to 450. Line a baking sheet with aluminum foil.
- Chop the sweet potatoes into cubes, approximately 1/2-inch thick. Place in a large bowl.
- In a small bowl, mix the vegetable broth, date syrup, cumin, cayenne, salt, and pepper.
- Pour the mixture over the sweet potatoes and stir to coat.
- Arrange the sweet potatoes in one layer on the baking sheet. Bake for 15 minutes, stir, and then bake another 10-20 minutes, until the potatoes are starting to brown.
- Remove from the oven. Place the potatoes back in the large bowl and stir in the chopped cilantro. Taste and season with additional salt and pepper. Enjoy!
