Ingredients

  • 2 Pounds Sweet Potatoes
  • 2 Tablespoons Vegetable Stock
  • 2 Tablespoons Date Syrup
  • 1 Teaspoon Ground Cumin
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Cup Choppped Fresh Cilantro

Instructions

  1. Preheat the oven to 450. Line a baking sheet with aluminum foil.
  2. Chop the sweet potatoes into cubes, approximately 1/2-inch thick. Place in a large bowl.
  3. In a small bowl, mix the vegetable broth, date syrup, cumin, cayenne, salt, and pepper.
  4. Pour the mixture over the sweet potatoes and stir to coat.
  5. Arrange the sweet potatoes in one layer on the baking sheet. Bake for 15 minutes, stir, and then bake another 10-20 minutes, until the potatoes are starting to brown.
  6. Remove from the oven. Place the potatoes back in the large bowl and stir in the chopped cilantro. Taste and season with additional salt and pepper. Enjoy!
