Ingredients

  • 8 Ounces Rotini Pasta (or other short pasta)
  • 12 Ounces Frozen Shelled Edamame, cooked according to package instructions
  • 1 Small Red Onion, diced
  • 1 Medium Bell Pepper, diced
  • 1/3 Cup Vegan Feta, optional
  • 2 Tablespoons Red Wine Vinegar
  • 1 Tablespoon Lemon Juice
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1/2 Teaspoon Salt

Instructions

  1. Cook the pasta according to the package instructions. Drain and rinse with cold water.
  2. When the pasta is cool, place it in a large bowl along with the remaining ingredients toss well. Serve and enjoy!
