Ingredients

  • 4-6 Cups Spinach
  • 4 Plums
  • 1/2 Red Onion, sliced
  • 1/2 Cup Pecans
  • 1/3 Cup Crumbled Vegan Feta, optional

Mustard Vinaigrette

  • 3 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons Non-Dairy Yogurt
  • 1 Tablespoon Maple or Date Syrup
  • 1/2 Teaspoon Salt

Instructions

  1. Slice the plums into eight wedges each.
  2. Grill 3-5 minutes per side on a non-stick griddle or lightly oiled grill.
  3. Meanwhile, prepare the dressing. Add all the dressing ingredients to a small bowl or mason jar. Mix well.
  4. When the plums are done, assemble the salad. Place the plums, pecans, and onions on a bed of spinach. Drizzle with dressing. Enjoy!
