Halloween Jack-O-Lantern Stuffed Peppers

Ingredients
- 6 Large Orange Bell Peppers
- 2 Cups Lotus Foods Forbidden Rice, dry
- 1 Large Yellow Onion, sliced
- 1 Can Black Beans, drained and rinsed
- 1 Tablespoon Garlic Powder
- 1 Teaspoon Salt
- 1/2 Teaspoon Chili Powder
- 2 Tablespoons Chopped Parsley
Instructions
- Preheat the oven to 425°F.
- In a medium pot, cook the rice according to the package directions.
- Slice the top off of each pepper and scoop out the seeds. Use a paring knife to cut out a jack-o-lantern face onto the side of the pepper.
- Arrange the peppers in a baking dish and bake in the oven for 15 minutes.
- In a small pan, sauté the onion, using a splash of water if the onion starts to stick. Cook 5-7 minutes, until soft.
- Stir in the black beans, garlic powder, salt, and chili powder. Cook a few minutes to warm the beans.
- When the rice is cooked, stir in the bean mixture.
- Divide the mixture evenly between all the peppers. Sprinkle with parsley, if desired. Serve and enjoy!
