High Protein Granola (without protein powder)

Ingredients

  • 3 Cups Puffed Millet or Rice
  • 2 Cups TVP (Textured Vegetable Protein)
  • 1 Cup Rolled Oats
  • 1/2 Cup Maple Syrup**
  • 2 Tablespoons Runny Nut Butter (I used peanut butter)
  • 1 Teaspoon Vanilla
  • ½ Teaspoon Salt
  • 1/2 Teaspoon Cinnamon

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix all the ingredients until thoroughly coated.
  3. Spread on the prepared pan and bake for 20-25 minutes until the granola is golden brown.
  4. Remove from the oven and cool completely on the pan to create clusters. Then break into chunks and enjoy!

Notes

**For a granola with larger clusters, increase the syrup to 3/4 cup.
