Ingredients

  • 1 Pound Brown Lentils
  • 3 1/2 Cups Water
  • 1 Yellow Onion, diced
  • 2 Shallots, sliced
  • 4 Cloves Garlic, minced
  • 3 Tablespoons 5-Minute Taco Seasoning
  • 2 Tablespoons Maple Syrup
  • 2 Teaspoons Red Wine Vinegar
  • 1/2 Teaspoon Liquid Smoke
  • To Serve: tortillas, tomatoes, lettuce, etc.

Instructions

  1. Sauté the onion and shallots in a large pot over medium heat for 5 minutes, until soft.
  2. Add the garlic. Cook 30 seconds.
  3. Add the lentils and water to the pot. Bring to a boil, then reduce to a simmer. Let cook for 20-25 minutes, until all the liquid is absorbed.
  4. Stir in the remaining ingredients.
  5. Serve taco-style with your favorite toppings.
