Ingredients
- 3 Pounds Russet Potatoes (about 4 large potatoes)
- 3 Tablespoons Vegetable Stock
- 1 Tablespoon Smoked Paprika
- 1 Teaspoon Dried Rosemary
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1 Teaspoon Kosher Salt
- 1/4 Teaspoon Black Pepper
- To serve: chopped fresh parsley, flaky sea salt, ketchup, vegan mayo, etc.
Instructions
- Preheat the air fryer to 400°F.
- Slice the potatoes in half lengthwise then cut into 1/2" wedges.
- Transfer to a large bowl and toss with vegetable stock and spices.
- Arrange in an even layer your air fryer (this may require multiple batches) and roast for 25-30 minutes or until cooked through and crisp.
