Ingredients

  • 3 Pounds Russet Potatoes (about 4 large potatoes)
  • 3 Tablespoons Vegetable Stock
  • 1 Tablespoon Smoked Paprika
  • 1 Teaspoon Dried Rosemary
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Kosher Salt
  • 1/4 Teaspoon Black Pepper
  • To serve: chopped fresh parsley, flaky sea salt, ketchup, vegan mayo, etc.

Instructions

  1. Preheat the air fryer to 400°F.
  2. Slice the potatoes in half lengthwise then cut into 1/2" wedges.
  3. Transfer to a large bowl and toss with vegetable stock and spices.
  4. Arrange in an even layer your air fryer (this may require multiple batches) and roast for 25-30 minutes or until cooked through and crisp.
