Ingredients
- 10 Ounces Baked Sweet Potato, skins removed
- 1/2 Cup Date Sugar
- 1/4 Cup Crunchy Peanut Butter
- 2 Tablespoons Date Syrup
- 2 Tablespoons Ground Flax
- 2 Teaspoons Vanilla Extract
- 3/4 Cup Peanut Powder
- 1/2 Cup Oat Flour
- 1 Tablespoon Baking Powder
- 1 Teaspoon Salt decrease to 1/2 teaspoon if using salted peanut butter
- 1/2 Teaspoon Cinnamon
- 1-2 Tablespoons Chopped Peanuts, for topping
Instructions
- Preheat the oven to 350. Line a loaf pan with parchment paper.
- In a medium bowl, mash the sweet potato.
- Add the date sugar, peanut butter, date syrup, ground flax, and vanilla extract. Stir until combined.
- Add the peanut powder, oat flour, baking powder, salt, and cinnamon. Mix well.
- Spread the mixture into the prepared pan. Top with chopped peanuts, if desired.
- Bake for 20 minutes, or until a toothpick inserted in the middle of the loaf comes out clean. Let cool 15 minutes. Enjoy!
