Ingredients

  • 1 Cup Unsweetened Applesauce
  • 1/2 Cup Maple Syrup
  • 1/2 Cup Nut Butter (like cashew butter)
  • 1 Tablespoon Lemon Juice
  • 2 Teaspoons Vanilla
  • 2 Cups Oat Flour
  • 3/4 Cup Almond Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • 3/4 Teaspoon Salt
  • 1/4 Teaspoon Nutmeg
  • 2 Cups Fresh Blackberries

Instructions

  1. Preheat the oven to 350°F. Line a muffin tin with liners.
  2. In a large bowl, mix the applesauce, syrup, nut butter, lemon juice, and vanilla. Stir until thoroughly combined.
  3. Add the oat flour, almond flour, baking soda, baking powder, salt, and nutmeg. Stir until the mixture is smooth.
  4. Gently fold in the blackberries. It's okay if a few of them break.
  5. Scoop into your muffin cups. Bake for 20-25 minutes until a toothpick comes out clean. Remove them from the oven and let cool completely. Enjoy!
