Ingredients

  • 3/4 Cup Date Sugar
  • 2/3 Cup Cashew Butter
  • 1/2 Cup Finely Chopped Cherries
  • 1/3 Cup Baked & Mashed Sweet Potato
  • 1/2 Cup Unsweetened Cocoa Powder
  • 1/4 Cup Oat Flour
  • 1/4 Cup Almond Flour
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/4 Cup Vegan Chocolate Chips
  • Cherries, to serve

Instructions

  1. Preheat the oven to 350° F. Line the bottom and sides of a brownie pan with parchment paper.
  2. In a medium bowl stir the sweet potato, date sugar, cashew butter, and cherries.
  3. Mix in the cocoa powder, oat flour, almond flour, baking powder, and baking soda. Stir until the mixture is smooth.
  4. Stir in the chocolate chips and optional cherry halves. Press into the prepared pan and bake for 20-25 minutes. Let cool in the pan for 15 minutes before cutting.
  5. When the brownies are cooled, top with additional cherries. Enjoy!
