Plant-Based Cauliflower White Sauce
This Vegan Cauliflower Béchamel Sauce is thick, rich, and creamy - it's also entirely plant-based. This white sauce is made with cauliflower and beans for a healthy sauce to serve with pasta or to create a creamy texture in any dish.

Ingredients
- 2 Heads Cauliflower, cut into florets
- 1 Can White Beans, including liquid
- 6 Cloves Garlic
- 2 Tablespoons Nutritional Yeast
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Onion Powder
- 1 Teaspoon Kosher Salt
- 1/4 Teaspoon Hot Pepper Flakes
- 1/4 Teaspoon Black Pepper
Instructions
- Steam the cauliflower until very tender, about 15 minutes.
- Transfer the cauliflower to a blender. Add the can of beans (including the liquid), garlic, nutritional yeast, lemon juice, onion powder, salt, hot pepper flakes, and black pepper. Blend until smooth.
- Season with salt and pepper to taste. Serve with your favorite pasta and enjoy!
