Plant-Based Mediterranean Nachos

Ingredients

  • 4-5 Small Pita Breads (gluten-free or regular) OR 3 Cups Vegan Pita Chips
  • 1 Can Chickpeas, drained & rinsed
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Paprika or Smoked Paprika
  • 1/3 Cup Kalamata Olives
  • 1/4 Cup Roasted Red Peppers
  • 1/4 Cup Banana Peppers
  • 1/4 Cup Sliced Cucumbers
  • 1/2 Cup Hummus
  • Tzatziki, to serve

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl toss the chickpeas with the garlic powder, paprika, and salt.
  3. Spread on a baking sheet and bake for 20-25 minutes, until crispy on the outside but soft on the inside.
  4. Slice the pita bread into triangles. Place on a separate baking sheet and toast in the oven with the chickpeas for 8-10 minutes - watch for burning.
  5. To assemble, place a bed of pitas down on a baking sheet or tray. Dollop the hummus onto the pitas, add the chickpeas, top with the olives, red peppers, banana peppers, and cucumbers. Drizzle with tzatziki. Enjoy!
