Plant-Based Mediterranean Nachos

Ingredients
- 4-5 Small Pita Breads (gluten-free or regular) OR 3 Cups Vegan Pita Chips
- 1 Can Chickpeas, drained & rinsed
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Salt
- 1/2 Teaspoon Paprika or Smoked Paprika
- 1/3 Cup Kalamata Olives
- 1/4 Cup Roasted Red Peppers
- 1/4 Cup Banana Peppers
- 1/4 Cup Sliced Cucumbers
- 1/2 Cup Hummus
- Tzatziki, to serve
Instructions
- Preheat the oven to 350°F.
- In a medium bowl toss the chickpeas with the garlic powder, paprika, and salt.
- Spread on a baking sheet and bake for 20-25 minutes, until crispy on the outside but soft on the inside.
- Slice the pita bread into triangles. Place on a separate baking sheet and toast in the oven with the chickpeas for 8-10 minutes - watch for burning.
- To assemble, place a bed of pitas down on a baking sheet or tray. Dollop the hummus onto the pitas, add the chickpeas, top with the olives, red peppers, banana peppers, and cucumbers. Drizzle with tzatziki. Enjoy!
