Ingredients

  • 1/2 Cup Cocoa Powder
  • 1/2 Cup Almond Flour
  • 1/3 Cup Almond Butter
  • 1/4 Cup Date Sugar
  • 2 Tablespoons + 2 Teaspoons Maple Syrup
  • 1/4 Teaspoon Peppermint Extract
  • 1/4 Teaspoon Salt
  • 8 oz Vegan Dark Chocolate
  • Topping (optional): crushed candy canes, sea salt, drizzle of chocolate

Instructions

  1. In a medium bowl, mix the almond butter, cocoa powder, almond flour, maple syrup, date sugar, and peppermint extract.
  2. Use a tablespoon to scoop the mixture and roll into balls.
  3. Refrigerate the truffles while you melt the chocolate. Heat the chocolate in the microwave on 1/2 power. Stir every 30 seconds until the chocolate is melted.
  4. Use a toothpick or spoon to cover each ball in chocolate. Place on a parchment-lined pan and refrigerate or freeze for 20-30 minutes to allow the chocolate to harden. Serve and enjoy!
