Ingredients

  • 1 1/2 Cup Rolled Oats
  • 1 Cup Oat Flour
  • 1/4 Teaspoon Salt
  • 1/4 Cup Maple Syrup
  • 1/4 Cup Tahini or Almond Butter
  • 3 Cups Sliced Strawberries
  • 1 Teaspoon Arrowroot Powder or Cornstarch
  • 1 Teaspoon Lemon Juice

Instructions

  1. Preheat the oven to 350°F. Line an 8×8 baking pan with parchment paper.
  2. In a medium bowl combine the oats, oat flour, and salt.
  3. Add the maple syrup and tahini. Stir until a crumbly mixture forms.
  4. Reserve a heaping 1/2 cup of the crumble. Then, press the crumble into the bottom of the parchment-lined pan.
  5. In a separate bowl, mix the sliced strawberries with the arrowroot and lemon juice.
  6. Spread the strawberries on top of the crust.
  7. Top the strawberries with the reserved crumble.
  8. Bake for 35-40 minutes until the top of the crumble is browned and the bars seem to hold together.
  9. Remove from the oven and let cool completely. Cut into bars. Enjoy!
