Plant-Based Waldorf Salad

This whole food plant-based Waldorf Salad is the vegan version of the classic recipe. Using a homemade mayo without oil, this salad is the healthy and delicious twist.

Ingredients

  • 2/3 Cup Vegan Mayo
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Chopped Fresh or Dried Parsley
  • 1 Tablespoon Maple Syrup
  • 1 Teaspoon Salt
  • 1 Cup Halved Red Grapes
  • 2 Small Green Apples, chopped
  • 3 Stalks Celery, chopped
  • 1/3 Cup Walnuts
  • 1/4 Cup Pepitas (optional)
  • 1 Head Boston Lettuce, to serve

Instructions

  1. Combine all the ingredients, except the lettuce, in a large bowl. Stir to combine.
  2. Serve on a bed of lettuce. Enjoy!
