Ingredients
- 2 Cups Rolled Oats
- 1 Cup Puffed Millet
- 3/4 Cup Shredded Coconut, divided
- 1/4 Cup Chia Seeds
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Salt
- 1/2 Cup Date Syrup
- 2 Teaspoon Vanilla Extract
- 1/2 Teaspoon Coconut Emulsion, optional
Instructions
- Preheat the oven to 300° F. Line a baking sheet with parchment paper.
- In a large bowl combine the oats, millet, 1/2 cup of the coconut, chia seeds, and cinnamon. Stir to combine.
- Add the date syrup, vanilla extract, and coconut emulsion. Stir until all the dry ingredients are evenly coated.
- Spread in an even layer on the baking sheet. Bake for 25-30 minutes, stirring halfway through.
- Let cool completely on the baking sheet. Then, break in to chunks and enjoy!
