Ingredients

  • 200 Grams Sweet Potato, steamed + mashed
  • 3/4 Cup Date Sugar
  • 2/3 Cup Nut Butter
  • 1/3 Cup Bourbon
  • 1/2 Cup Unsweetened Cocoa Powder
  • 1/4 Cup Oat Flour
  • 1/4 Cup Almond Flour
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/4 Cup Vegan Chocolate Chips

Instructions

  1. Preheat the oven to 350°F. Line the bottom and sides of a brownie pan with parchment paper.
  2. In a medium bowl, mix the sweet potato, date sugar, nut butter, and bourbon.
  3. Mix in the cocoa powder, oat flour, almond flour, baking powder, baking soda, and salt. Stir until the mixture is completely smooth.
  4. Stir in the chocolate chips. Press into the prepared pan and bake for 20 minutes. Let cool in the pan for 15 minutes before cutting. Enjoy!
