Ingredients

  • 1 15-Ounce Can Chickpeas, drained and rinsed OR 15 Ounces Mashed Steamed Sweet Potato
  • 1 Cup Homemade Oat Flour
  • 1/2 Cup Nut Butter (like mixed nut butter or cashew butter)
  • 1/2 Cup Maple Syrup
  • 1 Tablespoon Flax + 2 Tablespoons Water
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1/3 Cup Vegan White Chocolate Chips (optional) or equivalent amount of raisins or chopped walnuts

Instructions

  1. Preheat the oven to 350°F. Line an 8" x 8" baking pan with parchment paper.
  2. Add all the ingredients except the chocolate chips to a food processor and blend until smooth.
  3. Stir in the chips or other add-ins.
  4. Press the mixture the prepared baking pan and sprinkle with additional chocolate chips, if desired. Bake for 25-30 minutes, until a toothpick inserted in the center of the pan comes out clean and the blondies feel firm to the touch.
  5. Let cool at least 10 minutes before slicing. Cut into 9-16 bars. Enjoy!
