Sweet Potato Blondies

Ingredients

  • 2/3 Cup Cashew Butter
  • 2/3 Cup Mashed Japanese Sweet Potato (from steamed)
  • 1/2 Cup Date Sugar
  • 1/2 Cup Oat Flour
  • 1/4 Cup Buckwheat Flour
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda

Optional Add-Ins

  • 1/4 Cup Chopped Walnuts or Macadamia Nuts
  • 1/4 Cup Golden Raisins
  • 1/4 Cup Unsweetened Coconut

Instructions

  1. Preheat the oven to 350. Line a baking pan with parchment paper.
  2. In a large bowl mix all the ingredients, using your hands if necessary. Stir in your favorite add-ins (I used golden raisins!). Press into the prepared baking pan and bake for 20 minutes. Let cool in the pan for 15 minutes before cutting and serving. Enjoy!
