Ingredients

  • 2 Heads Cauliflower, cut into small florets
  • ½ Cup Maple Syrup
  • ¼ Cup Cornstarch
  • ¼ Cup Apple Cider Vinegar
  • 3 Tablespoons Ketchup
  • 2 Tablespoons Soy Sauce, Tamari, or Liquid Aminos
  • 2 Cloves Garlic, minced
  • 1 Teaspoon Red Pepper Flakes
  • 1 Medium Yellow Onion, small diced
  • 1 Red Bell Pepper, small diced
  • 1 Green Bell Pepper, small diced
  • Toppings: Sesame Seeds, Sliced Scallions
  • White Rice, to serve

Instructions

  1. Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  2. Rinse the cauliflower florets. Transfer to the prepared baking sheet and bake 25-30 minutes until starting to brown.
  3. Meanwhile, make the sauce. In a small bowl, mix the maple syrup, apple cider vinegar, cornstarch, ketchup, liquid aminos, garlic, and red pepper flakes.
  4. Heat a non-stick pan over medium heat. Add the onion and peppers and half of the sauce. Sauté, using the sauce as the cooking liquid, until the veggies are soft.
  5. When the cauliflower is ready, add it to the pan along with the remaining sauce. Stir to coat. Serve over rice. Enjoy!
