Tofu Apricot Skewers

Ingredients
- 1 Block Extra Firm Tofu
- 4 Apricots, cut into fourths
- 1 Tablespoon Vegetable Broth
- 1 Tablespoon Apple Cider Vinegar
- 3 Cloves Garlic, minced
- 1 Teaspoon Maple Syrup
- Juice of a Lemon
- 1 Teaspoon Dried Parsley
- 1 Teaspoon Died Thyme
- ½ Teaspoon Dried Rosemary, chopped
- Salt & Pepper, to taste
- 4 Skewers, metal or wooden (wooden should be soaked in water 15-30 min.)
Instructions
- Press the tofu for 10 minutes using a tofu press or heavy object.
- In a large bowl, add all ingredients except tofu and apricot. Whisk together.
- Chop the tofu into 1" pieces. Stir the tofu into the herb mixture and let marinate for an hour.
- Preheat the grill or set the air-fryer to bake at 350°F.
- Remove tofu from marinade. Skewer on a piece of tofu, then ¼ of an apricot. Repeat until the tofu and apricots are used up.
- Place the skewers on the wire rack of the air fryer or on the grill. Cook for 6-10 min.
