Ingredients
- 3 Medium Zucchinis
- 3 Tablespoons Ground Flaxseed + 6 Tablespoons Water
- 1/2 Cup Breadcrumbs (gluten-free, if necessary)
- 2 Tablespoons Nutritional Yeast
- 1 Teaspoon Dried Rosemary OR Italian Seasoning
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Salt
- 1/4 Teaspoon Pepper
Instructions
- Preheat the air fryer or oven to 400°F.
- In a medium bowl, prepare the flax egg by mixing the ground flaxseed and water. Let sit 5 minutes.
- In another medium bowl mix the breadcrumbs, nutritional yeast, rosemary, garlic powder, salt, and pepper.
- Cut the zucchinis in half widthwise, then slice into fries.
- Working one by one, coat each piece of zucchini in the flax egg, then in the spices.
- Arrange the fries in a single layer in your air fryer or on a baking sheet.
- Cook for 15 minutes, or until crispy. Serve with my garlic parsley aioli. Enjoy!
