Ingredients

  • 3 Medium Zucchinis
  • 3 Tablespoons Ground Flaxseed + 6 Tablespoons Water
  • 1/2 Cup Breadcrumbs (gluten-free, if necessary)
  • 2 Tablespoons Nutritional Yeast
  • 1 Teaspoon Dried Rosemary OR Italian Seasoning
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Pepper

Instructions

  1. Preheat the air fryer or oven to 400°F.
  2. In a medium bowl, prepare the flax egg by mixing the ground flaxseed and water. Let sit 5 minutes.
  3. In another medium bowl mix the breadcrumbs, nutritional yeast, rosemary, garlic powder, salt, and pepper.
  4. Cut the zucchinis in half widthwise, then slice into fries.
  5. Working one by one, coat each piece of zucchini in the flax egg, then in the spices.
  6. Arrange the fries in a single layer in your air fryer or on a baking sheet.
  7. Cook for 15 minutes, or until crispy. Serve with my garlic parsley aioli. Enjoy!
