Ingredients

  • 6 Stalks Celery, sliced
  • 3 Large Carrots, sliced
  • 1 Medium Yellow Onion, diced
  • 1 Recipe Vegan Seitan Chicken
  • 8 Cups Vegetable Broth
  • 1 Cup Dry White Rice
  • ⅔ Cup Lemon Juice (from 6-8 lemons)
  • 4 Flax Eggs (4 Tablespoons Ground Flax + 8 Tablespoons Water)
  • 1 Teaspoon Salt
  • ½ Teaspoon Pepper
  • Fresh Parsley & Lemon Slices, for garnish

Instructions

  1. Sauté the celery, carrots, and onion in a large pot or dutch oven over medium heat, until starting to soften.
  2. Add the broth and bring to a boil.
  3. Meanwhile, prepare the seitan chicken.
  4. Reduce the heat to low and add the rice. Simmer for 20 minutes, until the rice is tender.
  5. Add the seitan chicken, lemon juice, flax egg, salt, and pepper. Let simmer 5 minutes more.
  6. Serve with a garnish of fresh parsley and a lemon slice.
