Ingredients
- 1 Large Yellow Onion, chopped
- 2 Stalks Celery, chopped
- 4 Cloves Garlic, minced
- 2 Tablespoons Oat Flour
- 4 Cups Vegetable Broth
- 1 1/2 Cups Smooth Peanut Butter
- 1 Can Coconut Milk
- 1 Teaspoon Salt
- 1/2 Teaspoon Cayenne
- Peanuts, chopped
Instructions
- Sauté the onion and celery for 3-5 minutes, using a splash of vegetable broth.
- Add the garlic and cook 1 minute.
- Stir in the flour to coat.
- Add the vegetable broth and stir well. Bring to a boil.
- Add the peanut butter, coconut cream, salt, and cayenne. Transfer to a blender and blend until smooth.
- Return to the heat and cook until the mixture is warmed through.
- Garnish with peanuts. Serve and enjoy!
