Filling
- 6-8 Granny Smith Apples, peeled and sliced
- 1/4 Cup Maple Syrup
- 3 Tablespoons Arrowroot Powder/Cornstarch
- 2 Tablespoons Lemon Juice
- 1 Tablespoon Vanilla Extract
- 1 Teaspoon Cinnamon
- 1/4 Teaspoon Salt
Biscuit Topping
- 2 1/2 Cups Oat Flour, Almond Flour, or Cassava Flour (I used 2 cups of almond flour and 1/2 cup of oat flour)
- 1/3 Cup Maple Syrup
- 1/4 Cup Cashew or Almond Butter
- 1/4 Cup Non-Dairy Milk
- 2 Tablespoons Ground Flax + 5 Tablespoons Water
- 1 Teaspoon Baking Powder
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Salt
Instructions
- Preheat the oven to 400°F.
- In a large bowl toss the apples, maple syrup, arrowroot, lemon juice, vanilla, cinnamon, and salt. Place in a casserole dish or deep dish pie pan.
- In a separate bowl mix the flour, maple syrup, nut butter, milk, flax egg, baking powder, cinnamon, and salt.
- Spread the crust over the apple mixture - you can place it all in one layer or scoop into 2-tablespoon sized balls and flatten. Bake 30-35 minutes until the biscuit top is crisp. Let cool slightly before serving. Can be served warm or cold. Serve with a few scoops of vegan ice cream.
