Vegan Gluten Free Birds Nest Cookies

This vegan and gluten-free version of birds nest cookies is a quick, easy, and festive treat for Easter. These colorful no-bake cookies will be a hit this Easter.

Ingredients

  • 3 Cups Gluten Free Pretzels
  • 3/4 Cup Vegan Chocolate Chips
  • 1 Tablespoon Peanut Butter
  • 42 Vegan Candy Coated Peanuts, Vegan Candy Coated Chocolates, or Blueberries (I used the UnReal brand vegan candy coated peanuts)

Instructions

  1. Use your hands to crush the pretzels into small pieces. (Avoid using a food processor because this will create a powder instead of pieces.)
  2. In a microwave safe bowl, melt the chocolate on 50% power, stirring every 30 seconds until completely melted and smooth.
  3. In a large bowl add the crushed pretzels, melted chocolate, and peanut butter. Mix well.
  4. Use a cookie scoop or 1/4 cup measure to portion the pretzels into scant 1/4 cup sized bunches. Place on parchment lined baking sheet. Top each nest with three candies in a nest shape.
  5. Freeze or refrigerate for 10-15 minutes until the chocolate it set.
