Ingredients

  • 1 1/2 Cups Unsweetened Soy Milk (or other non-dairy milk)
  • 2 Servings Vegan Protein Powder
  • 2 Tablespoons Maple Syrup or Date Syrup
  • 1 Tablespoon Ground Flaxseeds
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Cinnamon
  • 1/4 Teaspoon Nutmeg
  • 1/8 Teaspoon Salt
  • 8 Slices Ezekiel Bread (I used the flax bread) or other higher protein bread, gluten-free if necessary
  • To serve: fresh fruit, maple syrup, yogurt, nut butter, etc.

Instructions

  1. Whisk the milk, protein powder, maple syrup, flaxseeds, vanilla, cinnamon, nutmeg, and salt in a large, flat pan or dish. Let sit 5-10 minutes.
  2. Soak a piece of bread in the milk mixture for about 20-30 seconds per side.
  3. Transfer to a non-stick pan and cook over medium heat for 2-3 minutes per side, until golden brown.
  4. Repeat the soaking and cooking process for each slice of bread. Serve with fresh fruit, maple syrup, yogurt, nut butter, etc. Enjoy!
