Ingredients
- 1 Head Kale, finely chopped
- 2 Apples, diced
- 1/4 Cup Plant-Based Mayo
- 1 Tablespoon Maple Syrup
- 1 Tablespoon Dijon Mustard
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Pepper
Instructions
- In a small bowl, whisk the mayo, maple syrup, Dijon, salt, and pepper.
- Place the kale in a large bowl and pour on the dressing. Massage the kale using your hands for several minutes until the kale is soft and slightly wilted.
- Toss in the apples. Serve immediately.
