Ingredients

  • 1 Head Kale, finely chopped
  • 2 Apples, diced
  • 1/4 Cup Plant-Based Mayo
  • 1 Tablespoon Maple Syrup
  • 1 Tablespoon Dijon Mustard
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper

Instructions

  1. In a small bowl, whisk the mayo, maple syrup, Dijon, salt, and pepper.
  2. Place the kale in a large bowl and pour on the dressing. Massage the kale using your hands for several minutes until the kale is soft and slightly wilted.
  3. Toss in the apples. Serve immediately.
