Ingredients

  • 2 Teaspoons Soy Sauce, Tamari, or Liquid Aminos
  • 1/2 Small Yellow Onion, diced
  • 3 Cloves Garlic, minced
  • 8 Ounces Mushrooms (I used a mixture of shiitakes and white button mushrooms)
  • 2 Slices Sourdough Bread (or bread of choice)
  • 1/2 Cup Oil-Free Hummus
  • Microgreens, for garnish

Instructions

  1. In a medium non-stick pan, sauté the onion until soft, using the soy sauce as the cooking liquid.
  2. Add the garlic and stir 30 seconds.
  3. Add the mushrooms and cook 5-7 minutes, until soft.
  4. Meanwhile, toast the bread.
  5. Spread a layer of hummus on the toast, add the mushroom mixture, and top with microgreens. Enjoy immediately!
