Ingredients
- 2 Teaspoons Soy Sauce, Tamari, or Liquid Aminos
- 1/2 Small Yellow Onion, diced
- 3 Cloves Garlic, minced
- 8 Ounces Mushrooms (I used a mixture of shiitakes and white button mushrooms)
- 2 Slices Sourdough Bread (or bread of choice)
- 1/2 Cup Oil-Free Hummus
- Microgreens, for garnish
Instructions
- In a medium non-stick pan, sauté the onion until soft, using the soy sauce as the cooking liquid.
- Add the garlic and stir 30 seconds.
- Add the mushrooms and cook 5-7 minutes, until soft.
- Meanwhile, toast the bread.
- Spread a layer of hummus on the toast, add the mushroom mixture, and top with microgreens. Enjoy immediately!
