Ingredients

  • 1 Large Yellow Onion, finely chopped
  • 4 Cloves Garlic, minced
  • 2 Cups Water
  • 2 Cups Vegetable Broth
  • 12 Ounces Pasta of choice
  • 1 Pound Broccoli Florets
  • 32 Ounces Sliced Mushrooms
  • 1 12-ounce Bag Frozen Edamame
  • 1 Teaspoon Kosher Salt
  • 1/4 Teaspoon Pepper

Instructions

  1. Using a few tablespoons of vegetable broth, sauté the onion in a large pot over medium-high heat. Add more vegetable broth if the onion starts to stick.
  2. Add the garlic. Cook for 30 seconds.
  3. Add the water, remaining vegetable broth, pasta, broccoli, mushrooms, edamame, salt, and pepper to the pot. Bring to a boil then let simmer for 8-10 minutes. Let cool slightly, then taste and season with additional salt and pepper, as desired.
