A healthy version of the classic Christmas cookie, these Vegan Peanut Butter Kiss Cookies are filled with good-for-you ingredients -- completely whole food plant based and fruit sweetened. A perfect addition to your Christmas baking.
- Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- In a large bowl, mix the peanut butter, date sugar, flaxseeds, and vanilla extract until combined.
- Add the oat flour, peanut powder, baking soda, and salt. Mix the dough, using your hands if necessary. If the dough is too dry, add the applesauce 1 Tablespoon at a time, until you can easily form a ball.
- Drop tablespoons of dough onto the prepared baking sheet. Then flatten the cookies with the palm of your hand (they won't spread during baking).
- Bake for 8 minutes.
- While the cookies are baking, melt your chocolate in the microwave on 50% power. Stir the chocolate every 30 seconds.
- Once the cookies are baked, decorate them with the chocolate however you'd like. Enjoy!

If your peanut butter already contains salt, add 1/4 teaspoon of salt instead of 1/2 teaspoon.
