Vegan Pumpkin Spice Latte Granola

Ingredients

  • 1 1/2 Cups Rolled Oats, certified gluten-free if necessary
  • 1/3 Cup Date Syrup
  • 2 Teaspoons Espresso Powder (can sub instant coffee)
  • 2 Teaspoons Pumpkin Pie Spice*

Instructions

  1. Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine all the ingredients until mixed thoroughly.
  3. Spread evenly on the baking sheet. Bake for 15 minutes. Let cool for 3-5 minutes. Enjoy!

Recipe Notes

*To make your own Pumpkin Pie Spice, combine 1 1/4 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon nutmeg, and 1/4 teaspoon cloves. This makes just enough for Pumpkin Spice Latte Granola.
