Ingredients

  • 12 Medjool Dates (with pits)
  • 1/4 Cup Vegan Cream Cheese
  • 2 Tablespoons Maple Syrup
  • 4 Sprigs Fresh Thyme Leaves + Extra sprigs for garnish
  • Pinch Salt
  • 3 Tablespoons Roughly Chopped Salted Pistachios

Instructions

  1. Use a pairing knife to carefully cut a slit lengthwise through each date. Remove the pits, keeping each date intact. Set aside.
  2. In a small bowl mix the cream cheese, maple syrup, thyme, and salt.
  3. Use a piping bag or zip top bag to pipe the cream cheese mixture into each date. Top with the pistachios and a garnish of thyme.
