Cherry Walnut Vinaigrette

Sweet, tangy, and thick, this Cherry Walnut Vinaigrette makes a delicious dressing for summer salads. Oil-free and made with only a few ingredients.

Is salad one of your daily dishes? If not, it definitely should be.

You can pack a salad full of so many nutritious foods. Leafy greens, crunchy veggies, beans, healthy fats (aka nuts and seeds), grains, and so much more. With all those food groups piled on you can be confident you are getting almost all of your vital nutrients.

But I'll admit, even when I know how healthy a salad is, sometimes I'm just not in the mood, especially when I'm just making myself the same salad over and over again each day. One way I like to spice things up though, is with dressings! My typical salad dressing is just plain balsamic vinegar. It's simple, low calorie, relatively healthy, and pretty tasty. Highly recommend. Yet sometimes balsamic just won't cut it. I need a change of pace. Enter: Cherry Walnut Vinaigrette.

I could eat this dressing with a spoon. It is phenomenal.(I promise I'm not actually eating it with a spoon though.) There's sweetness from the cherries, richness from the walnuts, and a nice tang from the white wine vinegar. This Cherry Walnut Vinaigrette has all the delicious flavors in one drizzle. It will totally spice up your salads and transform them from plain and boring to fancy and fabulous! (Yes, your salad can definitely be fabulous.)


What I love about this dressing (besides the incredible taste) is its simplicity. There are only 5 ingredients:

  • Walnut Butter
  • Tart Cherry Juice Concentrate
  • White Wine Vinegar
  • Water
  • Salt

Hopefully you've tried my Toasted Walnut Butter recipe and have fallen in love. I know I have. Because it's delicious! Whip up a batch of this walnut butter to keep on hand and you're set to make Cherry Walnut Vinaigrette any time. (And try not to eat all the walnut butter before you make the dressing.)

You should be able to find tart cherry juice concentrate at your regular grocery store. It will likely be with the 'health-food' juices. Make sure you buy the concentrate or else the flavor won't be as intense and the dressing won't be thick enough.

How to make Cherry Walnut Vinaigrette

To make this Cherry Walnut Vinaigrette, simply whisk all the ingredients together. And you're done!

I like to stick my dressing in the fridge for a couple hours before using it, to help it thicken, but you can definitely serve it immediately. Either way, it's delicious. Store any leftovers in the fridge.

Enjoy on salads or drizzled over any veggies of your choice!

  • 4 Tablespoons Walnut Butter
  • 2 Tablespoons Tart Cherry Juice Concentrate
  • 2 Tablespoons White Wine Vinegar
  • 2 Tablespoons Water
  • 1/2 Teaspoon Salt


  1. In a small bowl whisk together all the ingredients until the mixture is smooth. Store in the fridge. Enjoy!

Hi Could you please confirm two things:1. The amount of salt. Seems like too much. 2. The directions say there is lemon juice in the dressing but it’s not listed under ingredients. ThanksL.
Hi there! Confirming that the two teaspoons of salt in the dressing is correct. I didn't salt the cauliflower when roasting it or the salad after it was done, so this amount of salt was perfect. If you're concerned about it you can decrease the amount of salt in the dressing and then add more at the end if you need it. As for the lemon juice, SO sorry about that! It was a typo in my directions and I've removed it now. Hope this helps :)

Hi Martha! I don't have a recipe for red pepper hummus on my site. I suggest taking a traditional hummus recipe and blending in roasted red pepper.

Hi, these look amazing. I was wondering, could I used powdered peanut butter in place of creamy for the recipe? thanks
Hi Grace! There is already some powdered peanut butter in this recipe, so adding more might make the texture more gluey. Also, the real peanut butter adds some fat, which helps create flavor. That said, if you want to use powdered peanut butter, I would suggest mixing it with a high-fat liquid like coconut cream and then measuring out 2/3 cup. Hope this helps! You mention using vegetable broth in your introduction but it isn’t included in the recipe
Hi Becky - thanks for pointing this out. I have removed mention of vegetable broth from this post. You do not need any vegetable broth. The mushrooms will release natural liquid which will prevent any sticking. -- Elizabeth

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
