Japanese Sweet Potato Bites are soft and sweet. Easy to throw together, these bites make the perfect healthy and delicious snack!
I love sweet potatoes. I've shared so many sweet potato recipes with you guys. They are such a versatile food: fries, soup, brownies, hummus, or plain-Jane! And now I have a new sweet potato favorite: Japanese Sweet Potato Bites.
These bites are made with only a few simple ingredients and are naturally sweetened with only the sweet potatoes and dates. I love them because they are such a healthy snack. And they are made with real foods. So often, snack foods can be filled with processed ingredients. Those can be okay on occasion, but for everyday snacking, whole food ingredients are the way to go!
As the name suggests, I decided to make these with Japanese sweet potatoes. I wanted to make sure the bites were pretty sweet and Japanese sweet potatoes are much sweeter than regular sweet potatoes.
If you've never tried Japanese sweet potatoes before, buy a couple more than you need for this recipe. They are seriously so delicious. I eat these Roasted Japanese Sweet Potato Rounds almost every day. Do I have a slight problem? Possibly. Will I do anything about it? Definitely not. Sweet potatoes have tons of nutrients and fiber. They are an amazingly healthy food.
You'll probably need about one large sweet potato or two small ones for this recipe. Unlike my roasted sweet potato recipe, we'll be baking the sweet potato whole and then mashing the insides. Don't throw the skin away! It has lots of good vitamins and minerals. You can snack on it while you make these bites.
Once you bake and mash the sweet potato, add it to the food processor. We'll also add some almond flour, oat flour, dates, and salt. Process until smooth. Then add in some rolled oats for a bit of texture and process again.
If you want completely smooth bites, either replace the rolled oats with oat flour or add them in with the rest of the ingredients.
The mixture will probably be pretty sticky at this point, so in order for us to roll them into balls we'll need to refrigerate them for 10 minutes. When the mixture is easier to handle, roll it into balls. Then refrigerate again. Finally, if you'd like you can roll the bites in some shredded coconut. Enjoy!
