    Oil-Free Herb Roasted Sweet Potatoes

    Add some color to your table with these Oil-Free Herb Roasted Sweet Potatoes. Whether you're cooking Thanksgiving dinner or just want a delicious side, these sweet potatoes make a beautiful, flavorful dish.

    If you know me, you know I love sweet potatoes. I'm always looking for creative ways to eat them. Roasting sweet potatoes isn't all that innovative but I love this recipe because of the beautiful colors.

    Purple sweet potatoes are just gorgeous! When they're raw they have a bright purple hue and when cooked they deepen in color to a dark purple. And of course regular sweet potatoes are a bright vibrant orange. Purple and orange are Halloween's unofficial colors, so this dish feels appropriately like fall.

    Add your favorite herbs and spices and you've got yourself a beautiful, flavorful, healthy side dish. Perfect for a weeknight dinner or as a colorful Thanksgiving side dish.

    Why I love Oil-Free Herb Roasted Sweet Potatoes

    • Dietary needs - this recipe is dairy-free, plant-based, oil-free, gluten-free, and sugar-free
    • Delicious side dish - these sweet potatoes are incredibly tasty with just a few simple ingredients added
    • Nutrient dense - sweet potatoes are loaded with fiber and other incredible nutrients. Bonus: they taste amazing

    Ingredient Notes

    • Sweet Potatoes: I used both orange sweet potatoes and purple sweet potatoes. Feel free to use just orange or just purple.
    • Garlic: I used freeze dried garlic to cut down on prep time. Regular garlic works too.
    • Sage & Parsley: Or pick your favorite herbs.
    • Vegetable Broth: We'll use vegetable broth instead of oil to prevent sticking and add a little extra flavor.

    How to Roast Sweet Potatoes without Oil

    Roasting potatoes without oil is not difficult at all! It doesn't compromise the flavor of the potatoes and you leave out the oil which is a highly processed food with unnecessary calories. Meaning you get to eat more of the good stuff: potatoes.

    The key to using vegetable broth instead of oil is to only use a little. If you use too much veggie broth the liquid will steam the potatoes in the oven instead of roasting them. You want to use just enough to keep the potatoes from sticking to the pan (and in this case keep the herbs on the potatoes) but not too much.

    I used about ¼ cup in this recipe. With only 2-3 sweet potatoes, I wouldn't use much more than ¼ cup. If you notice that the sweet potatoes are starting to stick to the pan you can always add more during the bake. But you can never add less.

    To roast without oil all you need to do is coat the potatoes in the broth and roast like normal.

    How to make Oil-Free Herb Roasted Sweet Potatoes

    Step 1. Preheat the oven to 400°F.

    Step 2. Chop the sweet potatoes into small chunks (leave the skins on).

    Step 3. Add all the ingredients to a large bowl and mix evenly.

    Step 4. Spread on a parchment-lined baking sheet and bake for 30-35 minutes. Enjoy!
