Nothing gives off fall vibes more than warm cookies. Except maybe pumpkin recipes, coming soon! I definitely enjoy a nice hearty cookie now and then, but when I want a cookie on a random Thursday, I'm not about to whip up a super decadent recipe. I would, however, make a batch of these Oatmeal Raisin Cookie Bites. They're basically like oatmeal raisin cookies, but they're bite-sized and super cute. Also, they are healthy!
Oatmeal raisin cookies already have the reputation of health. Though, traditional oatmeal cookie recipes often have just as much butter and sugar as other cookie recipes. Yikes, I don't want any of that in my body. These cookie bites ARE definitely the healthy kind. They only have a few whole-food ingredients.
To make these cookie bites, start by making sure you have some date paste. Blend approximately 6 Medjool dates in a food processor until a ball forms. You can then measure out the 1/4 cup you need for this recipe.
Start by mixing the dry ingredients together. Then, in a separate bowl, mix the wet ingredients. Add the dry to the wet. Then, stir in the raisins.
Scoop tablespoon-sized balls onto a parchment-lined baking sheet. Bake for 14 minutes. Then, remove from the oven. Enjoy these fun fall treats!
