Vegan Mushroom Lentil Stew is a hearty, flavorful dish that's ready in just 40 minutes! A delicious cold weather dinner recipe with just a few simple ingredients.
There's nothing like a hearty stew when the weather starts to get cold. Stew is so warm and comforting. You eat it with a large hunk of bread and just settle into the meal.
I love this particular stew because of the lentils! Lentils are absolutely packed with plant-based protein, so you know you are getting a good dose of protein with this dish. Plus, lentils also have tons of fiber, which is helpful for digestion and supports overall gut health (so important!).
Besides the lentils, there are only a few other key ingredients. And the mushrooms are the secondary star of this dish. They have such a beautiful umami flavor that really comes through. No boring stew here!
Step 1. Sauté the mushrooms, onion, and carrots in a large pot for 5-7 minutes until they are soft. Use a splash of vegetable broth if necessary to prevent sticking.
Step 2. Add the broth, water, lentils, sage and thyme. Bring to a boil then let simmer 20 minutes, until the lentils are cooked.
Step 3. Remove from the heat, serve, and enjoy!
