Another oatmeal recipe coming at ya. Also another apple recipe. I'm not ashamed -- apples and oatmeal are foods we should all be eating more often. Plus, when the weather is cool, all I want is the warmth of a bowl of oats with some delicious Farmer's Market apples.
Is there a Farmer's Market near you? I am so lucky to be living in a college town with an awesome Farmer's Market. The market here is open year round and always has tons of fresh produce, homemade vegan breads, coffee, and more. It's one of my happy places.
I love the feeling of being outside on a cool morning with a warm cup of coffee in my hand and experiencing God's creation as I walk through the aisles of the Farmer's Market. It blows my mind to see all the fruits and vegetables that God gives us to keep us healthy. And talking with the farmers who put their hard labor into growing such wonderful food helps me remember to be thankful for all the gifts I have. What a lovely place.
And since apple season is in full swing there has been no shortage of fresh apples at the Farmer's Market. There are so many varieties. Crisp or soft. Sweet, tangy, or tart. Best for snacking, best for baking. So great!
Because I have a huge sweet tooth, I wanted the sweetest apples I could find. So I bought both Gala and Braeburn. But this recipe will taste good with whichever apples are your favorite.
Like my other oatmeal recipes, this one begins with mixing some ground flaxseed with water to create a flax egg. Besides being filled with healthy Omeaga-3s, flaxseed gives oatmeal the best thick texture.
For the oats, microwave with some water and cinnamon for about a minute. I've been experimenting with different oatmeal cook times. I've found that using a bit less water and microwaving for less time keeps the oats more intact and less mushy. You can do it either way!
After the oats are cooked, add vanilla extract, flax mixture, plant-based protein powder (optional), and half of a chopped apple. Then, top with the other half of the apple, sliced. Finally, drizzle some date syrup for that caramel apple taste. And done. Simple and quick. A delicious healthy breakfast. Enjoy!
