Edamame Peanut Lettuce Wraps are a tasty plant-based meal prep - they are packed with protein, fiber and healthy fats for a balanced meal!
For all my fellow peanut butter obsessed humans, I've got another good one! These delicious wraps are packed with peanut flavor. And you get full servings of both veggies and protein.
I was inspired to make these wraps from a meal prep photo shoot I did a few months ago. It made me think about how often we're on the go or, even if we're not, just want something that's really easy to put together right before you want to eat.
These wraps can be eaten warm or cold. And the recipe yields several servings, so you can easily make this on the weekend and have lunch all week. Plus, it's kind of a like a buffet type dish - you can prep the filling and make yourself as many little wraps as you're hungry for.
Step 1. Finely dice the bell peppers, onion, and cucumber.
Step 2. Add the edamame, bell pepper, and onion to a non-stick pan. Cook on medium heat until the edamame is warmed through and the peppers and onion are soft.
Step 3. Remove from the heat and stir in the cucumber.
Step 4. Mix the sauce ingredients in a small bowl.
Step 5. Pour the sauce into the edamame mixture. Stir to coat.
Step 6. To assemble, place a scoop of the edamame mixture into a leaf of lettuce. Top with peanuts. Enjoy!
