Do you guys remember the little pudding cups in your lunchbox when you were a kid? Maybe you still eat them occasionally.
I remember how smooth and creamy they were. That gel-like texture was incredible. Each bite filled with sweetness.
That's what this Healthy Chocolate Pudding tastes like. But better. Because it's made from whole-food plant-based ingredients.
This recipe is a HUGE reminder that you can eat tasty food and still be healthy.
There seems to be a myth surrounding healthy eating. Many people look at it like a choice: eat healthy or eat delicious food.
What they don't realize is that you can absolutely do both!
At first you might not enjoy all the healthier foods. Your taste buds are used to the hyper-processed foods that companies manufacture.
But over time, your taste buds will adjust. You will realize that plants have so much natural flavor.
There is a special beauty that comes in plant-based foods. When you eat them you know that this is how food was meant to be. In fact, it was designed for us to enjoy in its natural state.
And it still tastes good.
In fact, when you eat a diet entirely comprised of healthy foods, if you go back to eating the ultra-processed, manufactured foods you likely won't enjoy them. You'll notice they aren't natural. You'll find them to be too sweet or too salty.
This is one of the reasons why I advocate for real food. It is just as tasty as the processed stuff AND it comes with vitamins and minerals that take care of your body.
This pudding is an especially delicious example!
Blend cocoa powder and boiling water in a blender on high for 30 seconds.
Then add maple syrup, date syrup, chia seeds, avocado, vanilla, salt, and cold water. Blend on high for 45 seconds. Scrape down the sides of the blender to ensure all the ingredients are incorporated.
Blend again, slowly adding the coconut milk. Continue blending until the pudding is smooth. This should only take a minute or two.
Transfer to containers (like mason jars) and refrigerate for at least 2 hours. You can use small mason jars for individual servings or one large container. Serve straight from the jars or portion into bowls. Enjoy!
