Pineapple Mango Guacamole is a fruity twist on classic guac. It's fresh and sweet and looks stunning served inside a pineapple. Make it in just 10 minutes.
Who doesn't love guac?
This pineapple mango guacamole is the fruity version of your favorite guacamole dish. The tropical fruits give the dish some extra brightness - it's a perfect recipe for summer.
Step 1. In a medium bowl, mash the avocados.
Step 2. Stir in the remaining ingredients. Taste and season with additional salt and/or cayenne. Optionally, serve inside the center of a pineapple and enjoy with homemade tortilla chips.
Slice the top and bottom off the pineapple.
Then stand the pineapple upright on your cutting board and slice off the outer skin in 6-8 downward slices. You should now have a large cylinder.
Cut the cylinder in half lengthwise, then slice each half into thirds or quarters. This will leave you with long, triangle shaped pieces.
Remove the hard core from each triangle strip. Then cube.
If you want to use your pineapple as a serving dish, you'll need to cut the pineapple in a different way.
Lay the pineapple on its side and using a long, sharp knife slice the entire pineapple, including the leaves at the top, in half lengthwise.
Take one half and cut cross-hatches horizontally and vertically through the center, leaving 1/2" of margin around the edges. Your cross-hatches should be deep, but not cut through the bottom of the pineapple.
Then use a spoon to scoop out your cubes. You'll be left with the shell of the pineapple.
A mango has one long, flat seed in the center of the fruit so you'll need to cut around it. Slice each side just past the seed, about a 1/4" from the center.
Then use a peeler to remove the skin and cube the inner flesh. Or, follow a similar method to the pineapple and cut the halves into cross-hatches before scooping out the insides.
