This Black Bean Pico De Gallo is soooo quick and easy, I almost feel bad posting it as a recipe. It's that simple. But that's what makes it so great! You can throw this dish together in minutes and you have a super healthy snack.
Traditional Pico De Gallo is made from tomatoes, no black beans. But I love adding protein and fiber into any recipe, so I added black beans. And they work so well!
Having black beans in the recipe helps you feel fuller. If you choose to eat chips with your pico, you'll be less likely to over-eat your chips since the fiber of the beans will help you feel full. Amazing!
This recipe is so easy. Just chop up all the ingredients and mix!
Step 1. Prep all the ingredients. Dice the tomatoes and onion. Mince the garlic and jalapeno. Roughly chop the cilantro. Juice the lime.
Step 2. Add all the ingredients to a medium bowl. Stir to combine. Let sit a few minutes, up to half an hour, to let the flavors meld. When ready to serve, enjoy with plant-based chips or veggies.
