Bursting with smoky flavor these Smoked Paprika Roasted Almonds are a tasty snack! Only three whole food plant-based ingredients.
This recipe is for my mom. She's always snacking on these store bought paprika almonds that are drenched in oil. I realized that I could roast some almonds without oil and still deliver the delicious taste of the store bought ones. Let me know if you like them, mom!
Many people consider oil a health food, but when you think about it you'll realize that oil is actually highly processed.
Oil is made by pressing the fat out of plants (like olives, coconuts, etc.). It's plant-based but it is not a whole food. Does olive oil look anything like whole olives? Does vegetable oil look like vegetables? Nope.
Even 'healthy' oils like olive oil have negative effects on your body. They stiffen your arteries and affect their ability to dilate -- a necessary function. Further, oils contribute to the buildup of plaque along blood vessel walls, increasing heart attack risk. You can easily get all the supposed health benefits of oils by eating whole food sources of fat - like almonds! Both delicious and nutritious, almonds are one of the healthiest foods!
And these Smoked Paprika Roasted Almonds are begging you to eat them!
Step 1. Soak the almonds in 2 cups of water. Preheat the oven to 350°F. Line a baking sheet with parchment paper. Allow the almonds to soak while the oven is preheating.
Step 2. When the oven is heated, drain the almonds and spread on the baking sheet. Sprinkle with the paprika and salt. Shake the pan to coat.
Step 3. Bake for 15-20 minutes, until the almonds are lightly browned and fully dry, stirring halfway though.
Step 4. Remove from the oven and let cool. Enjoy!
Have an air fryer? You can easily roast these almonds in your air fryer.
Once you toss the almonds with the paprika and salt, simply place them in your air fryer at 250°F and air fry for 15 minutes, until the almonds are slightly browned.
